Winter Salad with Honey Mustard Dressing

This winter salad brings together tender slices chicken breast, crisp apples, jewel-like pomegranate seeds, roasted walnuts, and creamy feta cheese for a perfect balance of flavors and textures. Drizzled with a zesty honey mustard dressing, this salad is as satisfying as it is wholesome. It's a vibrant, nutrient-packed dish that captures the essence of the season while leaving you feeling refreshed and nourished.
Ingredients:
- About 6 C of salad greens
- 2 C chopped chicken breast
- 1 C chopped and toasted walnut
- 1/2 C sprouted pumpkin seeds
- 1 apple, sliced or chopped
- 2 C pomegranate seeds
- 1 C crumbled feta cheese (or blue cheese if you prefer)
- 1/3 C extra virgin olive oil
- 1/4 C balsamic or apple cider vinegar
- 2 tsp of orange zest and 2 tbsp orange juice from fresh orange
- 2 tbsp dijon mustard
- 2 tbsp honey
- 1 tsp garlic powder
- salt and pepper to taste
Directions:
- In a large bowl, combine salad greens through feta cheese and gently toss.
- To make the dressing combine olive oil through salt and pepper in a jar with a lid. Close lid and shake vigorously to mix dressing ingredients.
- Drizzle dressing over the salad greens mixture and enjoy!
