Banana Granola Recipe

With the cost of eggs these days, you might be looking for a high protein breakfast alternative that doesn’t break the bank. This protein granola pairs perfectly with Greek yogurt and fresh fruit for even more protein and fiber to make a complete breakfast.
Ingredients:
- 3 cups rolled oats
- 30g protein powder
- ¾ cup raw walnuts
- ½ cup raw pecans
- 3 Tbsp brown sugar
- ½ tsp sea salt
- ½ Tbsp ground cinnamon
- 1 Tbsp flaxseed
- ¼ cup coconut oil
- 1/3 cup agave syrup
- 1 tsp vanilla extract
- 1 medium ripe banana, mashed
Directions
- Preheat oven to 350 °F
- Mix the oats, protein powder, cinnamon, sugar, salt, flax, and nuts together in a bowl
- Heat a small saucepan over medium heat. Add the coconut oil, agave syrup, and vanilla extract. Once oil is completely melted, whisk in mashed banana until well combined. Pour over the dry ingredients and mix well.
- Spread the mixture evenly onto a large baking sheet. Bake for 10 minutes, remove from oven and stir with a rubber spatula. Return to oven for 10 additional minutes. Stir again. Return to oven for 5-10 more minutes. Watch closely to make sure granola turns golden brown, but doesn’t burn. This can happen quickly!
- Let cool before serving. Granola can be stored in an airtight container for a couple of weeks.
