Ingredients:

  • 1 C natural peanut butter (creamy or crunchy)
  • 1/2 C coconut sugar
  • 1/2 tsp salt
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 C vanilla whey protein powder (or 72 grams)
  • 1/4 C coconut flour
  • 1/4 C flaxseed meal
  • 1/2 C dark chocolate chips

Directions:

  1. Preheat oven to 350℉.
  2. In a medium bowl, mix peanut butter and coconut sugar. You can use beaters or just a spoon or spatula work well with this recipe.
  3. Add salt, eggs and vanilla extract to the bowl and mix well. 
  4. Add baking soda, protein powder, coconut flour and flaxseed meal to bowl and stir until mixed.
  5. Stir in the chocolate chips.
  6. Drop about 2 inch in diameter balls of cookie batter onto a baking sheet. Flatten the balls slightly with your fingertips or a greased cup bottom.
  7. Bake for 5-6 minutes or just until the edges start to brown. You don't want to overcook.
  8. Remove the baking sheet from the oven and allow the cookies to continue to bake and cool on the baking sheet for about 5 minutes before removing with a spatula.
  9. Enjoy!
