Cottage Cheese Protein Pancakes Recipe

Ingredients:
- 1 C all purpose flour (or gluten free all purpose flour)
- 3 Tbsp coconut sugar (or maple syrup)
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 4 eggs
- 1 C fat free small curd cottage cheese
- 1 tsp vanilla extract
- 2 - 4 Tbsp of milk or non-dairy milk
- butter
Directions:
- In a medium bowl, combine flour, sugar, cinnamon, baking powder and salt. Stir to combine
- Add eggs, cottage cheese, vanilla and milk to the dry mixture in the bowl and mix well with a whisk or handheld mixer.
- Heat griddle pan over medium/low heat, melt 1 Tbsp butter on the griddle. Drop pancake mix on the griddle to desired size pancake.
- Heat pancake mixture on one side until the edges start to appear dry, flip pancake and cook until a golden brown (2-3 minutes).
- Serve with topped with plain greek yogurt and fruit and nuts or your favorite topping.
