One Pan Meatballs and Orzo Recipe
Nov 06, 2024This simple yet flavorful one pan dish is a perfect go-to for any night of the week. It really is simple; just combine all the ingredients in a 9x13 baking dish and throw it in the oven. You can make it a bit more sophisticated by making your own homemade meatballs or keep it simple by using premade frozen meatballs or plant-based meatballs. Either way, it's delicious and sure to please.
Ingredients:
- 16 oz orzo, uncooked
- 3 C broth (chicken, vegetable and beef all work well)
- 2 C tomato soup (such as Pacific Foods creamy tomato soup)
- 3-4 C meatballs, homemade, frozen or plant-based
- 1 pint cherry tomatoes, halved
- 2 tsp Italian seasoning
- Parmesan cheese (optional)
- Fresh basil
Directions:
- Preheat oven to 425°F
- Prepare 9x13 baking pan by spraying it with oil
- Combine orzo, broth, tomato soup, meatballs, halved tomatoes and seasoning in the pan and mix gently.
- Bake for 20 min and then stir the mixture in the pan. Bake for an additional 10-15 minutes or until the orzo is to desired tenderness.
- Serve warm topped with shredded parmesan cheese and fresh basil.
