Almond & Flaxseed Tortillas Recipe

They may not look pretty but they are an amazingly nutritious, low-carb, and high-fiber alternative to traditional tortillas? These almond and flaxseed tortillas are a game-changer for active individuals who need balanced, wholesome options to fuel their busy lifestyles. Almond flour provides healthy fats, vitamin E, and magnesium, supporting sustained energy and muscle function. Flaxseeds are packed with omega-3 fatty acids and lignans, which promote heart health and reduce inflammation, while their fiber content aids digestion. Psyllium husk adds an extra boost of gut-friendly fiber, helping with satiety and digestion, while eggs deliver high-quality protein to support muscle repair and recovery. These tortillas are versatile, delicious, and a perfect foundation for nutrient-packed meals.
Ingredients:
- 1 C almond flour
- 1/4 C flaxseed meal
- 1/2 tsp salt
- 1/4 tsp baking powder
- 2 eggs
- 3 tbsp warm water
Directions:
- In a medium bowl combine all of the dry ingredients; almond flour, flaxseed meal, salt and baking powder and stir to combine
- In a small bowl, whisk together eggs and warm water.
- Add the egg mixture to the dry ingredients and mix well.
- Cover the dough and refrigerate for about 30 minutes.
- Once dough is chilled, divide the dough into 6 equal sections and form each section into a ball.
- Flatten the dough ball slightly and then roll out between two sheets of parchment paper with a rolling pin into 5-6 inch circular shapes.
- Heat a griddle or pan prepared with a thin coating of avocado oil on low/medium heat and carefully transfer the rolled dough to the pan.
- Cook each side of the tortilla for 1-2 minutes or until it starts to become ever so slightly golden brown.
- Remove from heat.
- Repeat with each ball of dough.
- Fill tortillas with your favorite wrap filling and enjoy!
- Store any remaining tortillas in the refrigerator
Notes: If the dough is to dry and hard to form, add an additional tsp of water.
