What is HBCD?

Cyclic dextrin, also known as highly branched cyclic dextrin (HBCD), is one of those very ingredients. HBCD is a specialized carbohydrate that is produced from starch and through an enzymatic process, starch is broken down and restructured into a cyclic, highly branched form. This restructuring gives cyclic dextrin unique properties that make it different from simpler sugars like glucose or dextrose.

HBCD is made up of glucose molecules that form a ring-like structure. This structure gives it a high molecular weight and makes it more complex than traditional carbohydrates.
