Lemon Protein Truffles Recipe

The zesty combination of fresh lemon rind and juice adds a bright citrus flavor, while a touch of coconut oil creates a rich, creamy texture. These truffles are simple to make and ideal for a keeping on hand for a balanced treat.

 

 

Ingredients:

  • 1 C almond flour
  • 32 g vanilla protein powder
  • 1/4 C coconut flour
  • 1/4 C granulated sugar
  • zest and juice from one lemon
  • 4 tbsp melted coconut oil
  • pinch of salt

Directions:

  • Combine almond flour, protein powder, coconut flour, and sugar in a bowl and stir to combine.
  • Add lemon zest, lemon juice, coconut oil and salt to the bowl and mix until well combined.
  • Roll dough into 1 inch balls.
  • Optionally, roll the ball in a mixture of sugar and shredded coconut. 
  • Enjoy.
