Kimchi Egg Stack Recipe

Ingredients:
- 2-3 eggs
- 2-3 street taco size corn tortillas, warmed
- 1 slice of cheddar cheese for each egg
- 1/2 C kimchi
- handful or two of fresh spinach
- salt & pepper
Directions:
- Determine how big of a stack you want. Use 2 eggs & tortillas for a smaller stack and 3 eggs & tortillas for a larger stack.
- Prepare 2 - 3 corn tortillas by warming them
- Fry 2 - 3 eggs in a medium pan, salt and pepper to taste. When eggs are almost done top with cheddar cheese slices and continue cooking until cheese is slightly melted.
- Remove eggs from pan and using the same pan, combine kimchi and fresh spinach. Cook until spinach is wilted and kimchi warmed through.
- Stack all of the ingredients together, starting with a corn tortilla, followed by an egg with cheese and the kimchi and spinach mixture. Continue stacking in this order with remain tortillas, eggs and kimchi mixture.
