Ingredients:

  • 2-3 eggs
  • 2-3 street taco size corn tortillas, warmed
  • 1 slice of cheddar cheese for each egg
  • 1/2 C kimchi
  • handful or two of fresh spinach
  • salt & pepper

Directions: 

  1. Determine how big of a stack you want. Use 2 eggs & tortillas for a smaller stack and 3 eggs & tortillas for a larger stack. 
  2. Prepare 2 - 3 corn tortillas by warming them
  3. Fry 2 - 3 eggs in a medium pan, salt and pepper to taste. When eggs are almost done top with cheddar cheese slices and continue cooking until cheese is slightly melted. 
  4. Remove eggs from pan and using the same pan, combine kimchi and fresh spinach. Cook until spinach is wilted and kimchi warmed through.
  5. Stack all of the ingredients together, starting with a corn tortilla, followed by an egg with cheese and the kimchi and spinach mixture. Continue stacking in this order with remain tortillas, eggs and kimchi mixture. 
  6. Enjoy!
