This bowl is packed with all the hearty essentials we love to have ready in the fridge. Ingredients:

  • 1/2 C hummus 
  • 1/2 C roasted vegetables
  • 2-3 hard boiled eggs, chopped or sliced
  • 1/4 C diced avocado
  • chopped spinach or other greens (optional)

Directions:

  1. Spread hummus in a small bowl. You can use premade hummus or make your own.
  2. Top hummus with warmed roasted vegetables. 
  3. Top with chopped or sliced hard boiled eggs, avocado and greens.
  4. Enjoy

 

Simple Hummus Recipe

Blend 1 can of drained chickpeas, 2 tablespoons of tahini, 2 tablespoons of olive oil, the juice of 1 lemon, 1 garlic clove, and a pinch of salt in a food processor until smooth. Add 2-3 tablespoons of water, a little at a time, for desired consistency. You can also add in favorites like roasted red pepper, pine nuts or extra garlic.

 

Simple Roasted Veggies Recipe

Chop tomatoes, onion, bell pepper and zucchini and toss liberally with olive oil. Salt and pepper to taste. Roast in a single layer on a baking sheet in the oven at 400℉ for 20 - 25 minutes.
